Blueberry Muffin Bites

These Blueberry Muffin Bites are the perfect way to grab a mini blueberry bite without having to commit to an entire muffin!  Grab and go!  With a sugar glaze on top, it adds a layer of “dessert” to these sweet little bites!  If you have a cake pop machine sitting around that only gets used once a year for birthday parties, this is the recipe for you!

To make these bites, I used a prepackaged blueberry muffin mix and a cake pop machine.  I used 1 1/2 TB of mix to fill each of the cake pop wells and cooked them for about 5 mins.  While still warm, I drizzled a small amount of glaze onto each pop and off they went into our mouths!

Ingredients

  • 1/4 cup whole milk
  • 1 tsp. vanilla exctract
  • 2 cups powdered sugar

Instructions

Combine milk and vanilla in a medium saucepan over low heat until warm.
Sift powdered sugar into warm milk mixture.
Whisk slowly until well combined
Remove glaze from heat and set over a bowl of warm water.
Dip muffins in glaze and set on a cooling rack placed in a cookie sheet. {I actually got lazy and just drizzled the glaze on the muffins...}
