Good morning!!! I’m just SO, SO happy to be here guest posting for the very first time on RTSTH! I’m Kristi – the girl behind making it in the mountains where I blog about my journey to turn our cookie-cutter house into a rustic, mountain retreat.
Though I’m usually more of a home decor & DIY kind of gal, today I thought I’d share something a little different with you all. Inspired by this CRAZY long heat wave we’ve been having (not that I’m complaining universe – we’re absolutely loving this sunshine!), and our current aversion to turning on the stove or oven, I thought this would be the perfect time to pass along one of my very favorite salad recipes for Summer! A wonderful friend of mine shared this recipe all the way from Spain and I have been in love with it since my very first bite! This is SUCH a quick and easy recipe with a very sophisticated and colorful presentation that makes it just perfect for Summer BBQ’s!
Ingredients
6 cups of lettuce
1 medium sized beet
1/2 cup cottage cheese
1/4 cup of pumpkin seeds (roasted)
4 tbsp strawberry jam
1/4 cup olive oil
2 tbsp balsamic vinegar
Method
Rinse the beets, coat with olive oil and wrap them with tinfoil. Roast in the oven at 425 degrees for approximately 45-50 minutes or until soft. Let cool and then peel and thinly slice. I tend to do this a few hours in advance, so that my beets have enough time to cool completely and I’m not feeling rushed when it comes time to assemble the salad.
Wash and dry the lettuce and cut it into bite sized pieces.
Spread it all out on a flat serving dish or platter.
Spread the cottage cheese evenly on top of your bed of lettuce.
Place a layer of thinly sliced beets over it all and top with the roasted pumpkin seeds.
Finally, mix the jam, olive oil and balsamic vinegar and pour it over the entire salad.
That’s it! Super quick, easy and most importantly, yummy!

I always say I don’t like beets but I don’t think I’ve ever really tried them! Might have to take the plunge and give this a try! It looks pretty too 🙂
